Hoffmann-Jayer Nuits-St-Georges Les Hauts Poirets
Located at the southern end of Nuits-Saint-Georges, the pinot noir grapes for "Les Hauts Poirets" are grown on a steep sloping plot on the hilltop above the old quarry at an altitude of 330m. Grapes are hand-picked at optimum ripeness prior to sorting, then 100% destemmed and transferred into vats. Fermentation lasts between 20 and 25 days. After racking, pressing and settling, the wine undergoes malolactic fermentation before being aged between 14 to 18 months. The wine is only racked once and is not filtered before bottling. Ageing potential of 10 - 15 years.
